Meatless Monday: Casserole Edition

If you didn’t know, Meatless Monday is in, Monday Meat Sweats are out.

On top of that, Mondays can be crazy. First day of the workweek, you’re tired from your weekend (from all that physical activity and green juice drinking you were doing…) and thinking about cooking seems like… UGH.

What else is there really to do than make an amazing Vegetarian casserole that will also take the pressure off of cooking for the next few nights? (Leftovers, helloooo!)
