First, let’s start off with some basics of this decidedly uncommon flour. Here are some of its great benefits:
- It is gluten free; it’s not a grain based flour. This is a great addition to any gluten free diet.
- It is rich in protein. One hundred grams of coconut flour contains 19.3 grams of protein.
- This flour is high in dietary fiber. A 100 gram serving provides a whopping 39 grams of fiber.
- It’s a good source of healthy fat. It supports the immune system and the thyroid. It also promotes good skin health.
- Safe For Diabetics. It is low in digestible carbohydrates which gently impacts blood sugar levels.
- The combination of high fiber, rich protein and healthy fat makes it quite filling.
Baking with coconut flour is not as simple as an even 1 to 1 swap. Here are some tips on how to use it:
- Coconut flour absorbs liquid more than any other flour. Typically, 1 cup of grain based flour is equal to 1/4 – 1/3 cup coconut flour. You will also need to raise egg and liquid amounts in the recipe. If you’re using 1 cup of flour you will need 6 eggs plus 1 cup of liquid. You may also use pureed fruit to increase the moisture.
- When using as a coating for frying or sautéing you can use it as an equivalent to wheat flour.
