Best Soup Recipes to Help Beat the Winter Blues

If you live on the east coast, you experienced a wintery mess again this week along with most of this winter! Yuk! Cold temperatures along with snow and ice seemed to be near and far. The kids celebrate with no school! Good for them bad for us moms.  Many of us have had difficulty trudging to the grocery store at many times. This leaves the fridge sparse along with veggies and ingredients looking for a recipe.  Time to get creative in the Kitchen!

Soups can help serve multiple purposes in the kitchen. You can get creative with your leftover ingredients. Soups are perfect for those veggies that are on the cusp of losing their tone for freshness. I know that I am always looking for ways to reduce waste. Not to mention that soups are also easy to make.   Put everything in a pot or your slow cooker and let simmer for hours.  I think we can all agree that nothing beats that winter nuisance and blues like a steaming bowl of soup.

We searched the web for you to find some great recipe choices that you can even consider adding your own flair.

Kale is a great choice for a soup as it provides antioxidants, is easy to digest and most importantly easy to digest when cooked.  Beans are a great source of protein along with multiple nutrients.
