Mayonnaise. I find that people either love it or hate it- that there is no in-between.
I used to find myself getting super frustrated trying to make some of my favorite recipes that called for mayo (like crab cakes which use mayo as a binder). From the taste to the cholesterol, trans fats, and preservatives, I was afraid of mayo.
A huge Gwyneth Paltrow fan, (I know–a controversial subject for some), I was reading up on her new cookbook It’s All Good: Delicious, Easy Recipes That Will Make You Look Good and Feel Great when I came across a new product: vegenaise.
I immediately found myself searching the web for facts about this new product. Lighter, healthier and tastier than mayo??? Could something so ideal really exist??
Almost everything I read had something positive to say about vegenaise, so I decided that I needed to try it. Immediately. After all, I was craving crab cakes.
It was in Whole Foods a few days later that I stumbled upon the glorious Follow Your Heart Vegenaise.
With five different varieties to choose from (Original, Reduced Fat, Grapeseed Oil, Soy-Free, and Organic) I decided to go with the basic, blue lid- the Original.
I had barely taken my hand off the jar, after setting it on the kitchen counter when my younger sister whipped it up and began inspecting the jar from top to bottom. A huge mayo-lover, she decided to test it out on a sandwich. As she took her first bite, a huge smiled swept across her face. “I can’t remember the last time a turkey sandwich tasted so good!” she exclaimed, before taking her next bite.
Her reaction made me even more excited to finally make some crab cakes. I absolutely love to experiment while I cook and bake, so I always find myself swapping out unhealthier ingredients with healthier options.
The crab cakes were amazing! I made my entire family try them, and they all told me they tasted better than usual! I like to say it’s because I added some extra love to them while cooking, but really, I must give all the credit to the vegenaise.
